Biscuit Rotti


For the Rottis

1/2 cup Bombay Rava
1 cup All purpose Flour / maida
3 tsp Sugar
1 tbsp oil/Ghee
Salt to taste

For the filling

2 tsp Bengal Gram flour
1/2 cup finely grated Coconut
1/2 tsp mustard
1/2 tsp urad dal
4/5 curry leaves
3 green chillies or
1 tsp Chilli Powder
Small piece of Ginger
pinch of Asafetida powder(hing)
2 tsp oil

Oil to Fry.

Soak Bombay rava for 30 minutes till its absorbs all the water. Add salt, sugar, oil and knead adding maida and keep it for 10/15 minutes, covered with wet cloth.

Finely chop green chillies, ginger, curry leaves, Heat 2 tsp oil in a Pan, add mustard seeds. Once it starts spluttering, add urad dal and fry till it turn brown, add chopped ginger, green chillies, curry leaves and fry them for about 2-3 minutes. Add grated coconut and fry it for about 2/3 minutes till it turns little Brown, Add asafetida powder, turmeric powder, chilly powder and fry for a while, dont burn. add Bengal Gram flour Adjust salt and mix thoroughly and keep it aside.

Heat the oil for deep frying. Divide the dough and make smaller lime size balls. Roll into small circles like pure. add 1 tsp of filling and fold the outer cover, and Roll like aloo paratha/Holige/Puran Poli but smaller in Size. Then deep fry till it turn Golden Brown.
