Saffron rice with nuts


2 cups long grain rice(basmati).
3 1/2 cups water.
1 tsp sugar.
Salt to taste.
1 medium onion.
Ginger-Garlic paste – 1 tsp ,
3 cloves,1/2 tsp cumin seeds,
1 cinnamon,3 cardamoms,
1 bay leaf,
1/2 tsp saffron.
2 tbs cashewnuts.
1 tbs almonds (soaked and peeled).
3 tbs ghee.

Wash and soak rice for 15-20 minutes.
Drain rice keep aside.
Heat ghee in a heavy pan.
Add onion and add garam masalas.
And fry the onion till golden brown.
Add ginger-garlic paste.
Add nuts and rice and fry in ghee for 2 minutes.
Add saffron.
Add 3 1/2 cups boiling water.As it comes to boil, cover and simmer till cooked.
Garnish with fried cashewnuts.
