Ingredients
Pork 1 kg (Equal Amount of Fat and meat)
Garlic 1.5 pod
2 Large Onions
Cumin seeds,Poppy seeds,Raw rice,and Mustard seeds ? tsp each
Turmeric powder 1/2 tsp
Cinnamon 4 inch piece
Long dry chillies
Cinnamon leaves 6
15 Pepper corns
Mint leaves 1 tblsp (finely chopped)
? tsp Cloves
Tamarind the size of a small Lemon
10 Dates or raisins
Salt to taste
4 dates or 1 tblsp raisins
Directions
To Fry pork clices Pork fat as required Sugar if Required. Vinegar
Method: Cut meat into 2 sq.inch slices, marinate with salt (to taste), turmeric powder (1/2 tsp) and keep for a couple of hours. In a frying pan with some pork fat, lightly fry marinated pork slices. Broil all spices and grind to a fine paste with a dash of vinegar, do not add much water. Slice two large onions and fry in pork fat(can use other oil too) on moderate heat to a golden brown colour. Add fried pork, ground spices and cook till done. Add sugar if sweetness is required. Salt to taste
