Potatoes are high in nutritive value. According to the latest findings, it is second only to broccoli in terms of disease fighting antioxidant activity. Thus it offers effective protection against cardiovascular diseases and cancer. Potatoes can be used effectively to cure eczema. Contrary to the popular belief, potatoes are low in fats and calories. In fact 70-80% of their weight is water.
How to get the best of your potato:
•Buying Potatoes- Choose only well shaped and firm tubers. The skin should be relatively smooth. There should not be too many eyes.
•Cooking Potatoes- Choose potatoes of uniform shape and size. Cook potatoes in their jackets. This will preserve essential nutrients and ensure uniform cooking.
•It is advisable to use only stainless steel vessels for cooking potatoes, as the use of aluminium or iron vessels will discolour them.
•Sometimes potatoes have a greenish tinge. This is caused due to over exposure to light. When eaten in substantial amounts this can prove to be toxic. So, remove the green portion before cooking.
•To keep peeled potatoes fresh and white, soak them in cold water to which a little lemon juice has been added.
•Fried potatoes become crispier when a little flour is sprinkled on them before frying.
•Use up left over boiled potatoes, by putting in a blender with some milk. Heat, add salt, pepper and a dash of butter. Delicious potato soup is ready.
•To bake potatoes in half the usual time, stand them in hot water for about 15 minutes. Then bake in a very hot oven.
•Store potatoes in a cool well ventilated place.
•Never store potatoes and onions together. Onions emit a gas which causes potatoes to decay.
•Do not refrigerate potatoes. This converts the inherent starch into sugar. The sugar gives a dark appearance to the potatoes upon cooking.
•Try and eat potatoes with the peel, whenever possible. The highest concentration of antioxidants is found beneath the skin.
•Potatoes in beauty care- Potatoes are great cleansers. For cleaning oily skin, put grated potatoes in gauze and rub it on your face. Leave it on for about 15 minutes. Then wash off with luke warm water.
•To remove dark circles under the eyes, wrap grated potatoes in gauze and rub around the affected area. Leave on for about half an hour. Wash off and apply eye cream.
