Plum Cake


• 2 cup All-Purpose Flour or self-rising flour
• 1 cups Plums (sliced)
• 1 cups Raisins
• 3 Eggs
• 1/2 cup Butter
• 1/2 cup White Sugar
• 1 tsp Lemon Zest
• 1 tsp. vanilla
• 1 tsp. Brandy / Rum (Optional)
• 1/2 tsp Baking Powder


• Pre Heat the oven at 350 degrees F for 10 minutes
• Grease an oven safe pan.
• Beat the egg whites in a bowl and leave aside.
• Mix the butter with sugar in a large bowl.
• Make a fine cream by beating the sugar and butter. Separately, beat the yolks and whites. Continue beating the creamed butter-sugar, Beat egg yolks add Vanilla and the lemon zest. Add it to the butter mixture.
• Mix 2-cup flour and baking powder.
• Mix this flour mixture into the creamed mixture.
• Add Brandy / Rum (optional)
• Add and Mix the egg whites.
• Spread the batter uniformly into the prepared pan.
• Arrange the sliced plums attractively over the batter with skin-side down.
• Bake it for 50 minutes at 350 degrees F.
• Plum Cake is ready.
