Boneless chicken with okra

Ingredients:

500g – boneless chicken cubes
1/2 tsp – garlic chopped
750g – okra, washed, dried, cut into 1 inch pieces
2-3 – large onions, chopped roughly or sliced
2-3 – tomatoes, diced
1-2 – green chillies, chopped
Salt to taste
1/2 tsp – crushed red chillies
1/4 tsp – turmeric powder
1/4 tsp to 1/2 tsp – red chilli powder
2-3 tbsp – lemon juice (or use 1 tbsp white vinegar)
1/2 tsp – chaat masala
2-3 cups – oil to fry okra for deep frying

Method:

In 1/4 cup oil, fry garlic till light golden, add chicken and fry for 1 to 2 minutes till it changes colour (do not over cook or it will dry)
Add green chillies and fry for a few seconds, add in tomatoes and 1/2 tsp salt, crushed dry red chillies, turmeric, red chilli powder and fry well with 3-4 tbsp water.
Cover, cook on a medium flame for 2 more mins till tomatoes dry and oil seperates; take off from flame.
Deep fry okra on high flame till it dries a little.
When it is no longer sticky, take out and sieve.
Now add okra in the chicken with onions and mix.
Partially cover dish and cook on medium flame for a few mins, add lemon juice, chaat masala, coriander leaves,.
Mix and put on dum [very low flame] for 4 to 5 mins.
