Pork 1 kg (Fat and meat)
Salt to taste
Turmeric powder ½ tsp .
Pork fat as required for lightly frying pork slices.
Long dry chillies 15
Pepper corns ½ tsp
Dates or raisins 4 dates or 1 tblsp raisins
Garlic 1 pod
Cumin seeds ½ tblsp
Poppy seeds ½ tblsp
Raw rice ½ tblsp
Mustard seeds ½ tsp
Cinnamon 4 inch piece
Mint leaves (finely chopped) 1 tblsp
Tamarind the size of a marble
Cut meat into 2 sq.inch slices, apply salt (to taste),
turmeric powder (1/2 tsp) and marinate for a couple of hours.
In a frying pan melt some pork fat and lightly fry marinated pork slices.
Broil all spices and grind to a fine paste with a dash of vinegar.
Slice two large onions and fry in oil or pork fat on moderate heat to a golden brown colour.
Add fried pork, ground spices and cook till done.
Add sugar or jaggery if sweetness is required.
