Mutton Sukkha – Mangalorean Style

1 Kg Mutton
1 Small Coconut
Vegetable Oil
Salt
Curry Leaves
Coriander leaves (optional)
Small Lemon (optional)

Masala Ingredients:

10 Dry chilies (Kashmiri)
8 Dry chilies (short one)
6 nos Cloves
6 nos Black Pepper
4 tsp Coriander seeds
4 nos Cardamom
4 Bay leaves
2 tsp Poppy seeds
2 inches Cinnamon
1 tsp Cumin seeds
1/2 tsp Turmeric powder
1/2 tsp Fenugreek
1/4 tsp. Mustard
1/4 tsp. Ajwain (oama)

Fry Ingredients:
2 medium Tomatoes
2 medium Onion (finely chopped)
2 inches Ginger (finely chopped)
8/10 Garlic (smashed)
Curry leaves

Cut mutton into small to medium pieces (as you like) and keep it aside. Fry all the masala ingredients in little oil and grind it when it’s hot.

In same pan with little oil fry 2 twigs of curry leaves and little turmeric powder when its aroma starts, add grated coconut and fry till coconut turn little brown.

In medium size deep earthen pot, fry curry leaves till its aroma starts then add finely chopped onions of Fry ingredients, add ginger and garlic, once they done add chopped tomatoes till its dissolve and turn paste, then as mutton and fry till its tender.

Add little water if needed.

Then add powdered masala cook till it’s done.
Add fried coconut, stir well
Add lemon juice season with curry leaves. Garnish with coriander leaves
Add Salt and serve with neer dosa.
